Main Ingredients

  • 1 lb ground beef Can substitute with ground turkey or chicken
  • 1 cup nacho cheese sauce Homemade or vegan alternatives are acceptable
  • 1 can Rotel (drained) Can use canned diced tomatoes with green chilies as an alternative
  • 1/3 cup sour cream
  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped onions
  • shredded lettuce
  • 1 packet taco seasoning
  • crumbled nacho cheese Doritos
  • 4 large flour tortillas Corn tortillas can be used as an alternative

Instructions
 

Preparation

  • In a skillet over medium-high heat, cook the ground beef until it’s browned, stirring occasionally.
  • Drain any excess grease to keep your wraps from being too greasy.
  • Stir in the taco seasoning and set the beef aside to cool slightly.
  • In a separate pan, sauté the chopped onions and bell peppers over medium heat until softened, about 4-5 minutes.
  • In a bowl, mix the nacho cheese sauce and drained Rotel until everything is blended nicely.

Assembly

  • On each tortilla, layer the nacho cheese mixture, a spoon of sour cream, sautéed vegetables, seasoned beef, shredded lettuce, and a handful of crumbled Doritos.
  • Roll up the tortillas tightly and toast them in a skillet over medium heat until they become crispy, about 2-3 minutes per side.
  • Serve warm, sliced in half, with optional garnishes such as extra cheese or salsa.

Notes

Store in an airtight container for up to 3 days. Can be frozen for up to 2 months. Reheat in a skillet or oven for best results.
