  • 2 pounds beef stew meat Opt for chuck roast, brisket, or round cuts.
  • 4 pieces carrots, sliced Add according to preference.
  • 4 pieces potatoes, diced Can use any type of potatoes.
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (optional) For deeper flavor; substitute with beef broth if omitted.
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Preparation

  • Brown the beef stew meat in a large skillet over medium-high heat with a little oil until browned on all sides.
  • Transfer the browned beef to the Crockpot.
  • Layer sliced carrots, diced potatoes, chopped onion, and minced garlic into the Crockpot.
  • In a separate bowl, combine beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Stir well.
  • Pour the broth mixture over the meat and vegetables in the Crockpot.
  • Cover and cook on low for 6-8 hours or on high for 4-5 hours.
  • Once cooked, serve hot in bowls.

Notes

Store leftovers in an airtight container for up to 3-4 days. Beef stew also freezes well.
