  • 4 large flour tortillas You can substitute with corn tortillas for a gluten-free option.
  • 1 lb ground beef Lean turkey or plant-based alternatives can be used.
  • 1 cup diced vegetables (like onions, peas, and carrots) Feel free to use your favorite veggies.
  • 2 cloves garlic, minced
  • 1 tablespoon cumin
  • 1 tablespoon coriander
  • to taste salt and pepper
  • 1 egg for egg wash
  • as needed oil For baking.

Preparation

  • Preheat your oven to 400°F (200°C) to ensure it's hot when your tortilla pockets go in.
  • In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the diced vegetables, minced garlic, cumin, coriander, salt, and pepper. Cook until the vegetables are tender.
  • On each tortilla, place a generous amount of the beef mixture. Fold the tortilla over to form a pocket and seal the edges.
  • Brush the tops of the pockets with the egg wash for a golden finish.
  • Place the pockets on a baking sheet and bake for 15-20 minutes or until golden brown.
  • Once baked, serve the pockets hot.

Notes

Store in the fridge for up to 3 days or freeze for up to 2 months. Ensure to drain excess fat and avoid overfilling to maintain crispiness.
