Ingredients
  

For the Meatballs

  • 1 pound ground beef Can substitute with ground turkey or chicken for a leaner option.
  • 1/2 cup almond flour Can substitute with breadcrumbs or oat flour.
  • 1/4 cup chopped fresh parsley Fresh parsley enhances flavor.
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg

For Serving

  • 1 cup cooked rice Follow package instructions for cooking.
  • Tzatziki sauce Use store-bought or homemade.
  • Assorted crisp veggies (lettuce, cucumber, bell pepper, etc.) Choose your favorite vegetables.

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, mix the ground beef, almond flour, parsley, garlic, oregano, salt, pepper, and egg until well combined.
  • Shape the mixture into meatballs, about 1-2 inches in diameter, and place them on a baking sheet lined with parchment paper.

Baking

  • Bake for 20-25 minutes or until the internal temperature reaches 160°F.
  • While the meatballs bake, prepare the rice according to package instructions.

Serving

  • Serve the meatballs over a bed of fluffy rice, topped with tzatziki sauce and assorted veggies.

Notes

Customize your bowl with different toppings and herbs. For extra flavor, garnish with fresh herbs or lemon zest.
