  • 200 g chocolate sponge cake
  • 100 ml Baileys Irish Cream For a non-alcoholic version, use coffee or chocolate-flavored syrup.
  • 200 g dark chocolate Using high-quality chocolate enhances the flavor.
  • 50 g unsalted butter
  • 300 ml heavy cream Consider using whipped topping for a lighter version.
  • powdered sugar powdered sugar (for dusting)

Preparation

  • Preheat your oven to 180°C (350°F). Grease and line a baking tray with parchment paper.
  • Melt the dark chocolate gently in a microwave or double boiler, then allow it to cool slightly.
  • In a separate bowl, whisk eggs and sugar until pale and fluffy. Fold in the melted chocolate and sifter flour gently until everything is well combined.
  • Pour the batter into the prepared tray and spread it evenly. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  • Once baked, remove the cake from the oven and allow it to cool in the tray for a few minutes.
  • Transfer to a clean kitchen towel, roll it up while it’s still warm, and let it cool completely.
  • In a mixing bowl, whip the heavy cream with Baileys until stiff peaks form.
  • Carefully unroll the cooled sponge, gently peeling away the towel. Spread the whipped cream mixture evenly over the surface.
  • Roll the sponge back tightly, starting from one of the shorter ends. Place it seam-side down on a serving platter.
  • Melt together the dark chocolate and butter, stir until smooth, then pour it over the log, spreading it evenly.
  • Dust your Yule Log with powdered sugar for a beautiful finishing touch before serving.

Notes

Store in the refrigerator for up to 3-4 days. Can be frozen for up to 2 months; make sure it’s tightly wrapped.
