  • 1 ripe avocado ripe avocado Choose a ripe avocado for the best texture.
  • 2 eggs eggs Hard-boiled eggs for egg salad.
  • 2 tablespoons mayonnaise Can substitute with Greek yogurt for a lighter version.
  • 1 teaspoon Dijon mustard
  • to taste Salt and pepper
  • 1/4 cup cooked bacon bits
  • to taste Red pepper flakes (optional) For spice, if desired.

Preparation

  • Toast the slices of bread until crispy and golden brown.
  • Mash the ripe avocado in a bowl until creamy and smooth, seasoning with salt and pepper.
  • In another bowl, mix together the boiled and chopped eggs, mayonnaise, Dijon mustard, salt, and pepper until well combined.
  • Spread the mashed avocado evenly on each slice of toasted bread.
  • Spoon the egg salad mixture over the avocado layer.
  • Sprinkle bacon bits evenly over the egg salad and add red pepper flakes if desired.
  • Serve immediately while warm.

Notes

For best results, enjoy the toast while it's warm. Add optional toppings like fresh herbs, microgreens, or a drizzle of balsamic reduction for extra flavor.
