  • 1 cup mixed salad greens
  • 1/2 cup almonds, sliced Can be omitted or replaced with seeds for a nut-free option.
  • 1/4 cup green onions, chopped
  • 1/2 cup red cabbage, shredded
  • 1/4 cup cilantro, chopped Alternatively, use parsley or omit if desired.

Dressing

  • 3 tablespoons sesame oil Can substitute with light olive oil or avocado oil.
  • 2 tablespoons rice vinegar Ensure it's gluten-free if needed.
  • 1 tablespoon honey For vegan option, substitute with agave syrup.
  • Salt and pepper to taste

Preparation

  • In a large bowl, gently combine the shredded chicken, cranberries, mixed greens, sliced almonds, chopped green onions, shredded red cabbage, and chopped cilantro.
  • In a separate small bowl, whisk together the sesame oil, rice vinegar, honey, and a pinch of salt and pepper.
  • Pour the prepared dressing over the salad and toss gently until well coated.
  • Serve immediately or refrigerate, keeping the dressing separate until just before serving.

Notes

For the freshest taste, store the salad and dressing separately if made ahead. Customize the salad by adding other vegetables like cucumbers or bell peppers, or by spicing it up with chili flakes for a kick.
