For the Pie Crust

  • 1 recipe Homemade Double Pie Crust (2 sheets of pie dough) Chilled before using

For the Filling

  • 5 pounds Apples (about 11 large apples, a mix of Granny Smith, Gala, and Golden Delicious) Variety for balance of flavors
  • 1/4 teaspoon Lemon Zest Use a microplane
  • 2 tablespoons Juice from Half a Lemon Prevents apples from browning
  • 3/4 cup Brown Sugar (packed)
  • 3/4 cup Granulated Sugar
  • 5 tablespoons All-Purpose Flour
  • 1/4 teaspoon Kosher Salt
  • 1 & 1/2 teaspoons Cinnamon
  • 3/4 teaspoon Nutmeg
  • 1/2 teaspoon Cardamom (optional)
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Milk (for brushing on pie) For a golden color
  • 1 tablespoon Beaten Egg (optional, for brushing on pie) For an extra shiny finish
  • 1 tablespoon Raw Sugar (for topping pie) For a crunchy texture

Preparation

  • Step 1: Choose Your Apples - Mix different types of apples for depth in flavor.
  • Step 2: Zest and Juice the Lemon - Zest the lemon and extract the juice.
  • Step 3: Peel and Slice Apples - Cut apples into thin, even slices and toss in lemon juice.
  • Step 4: Cook the Apples - Combine apples with sugars and spices in a skillet and cook until fork-tender for about 10 minutes.
  • Step 5: Prepare the Pie Crust - Roll out the chilled pie dough and fit into the pie dish.
  • Step 6: Add the Filling and Top Crust - Spoon apple filling into the crust and cover with the second dough sheet.
  • Step 7: Chill Before Baking - Chill the assembled pie in the fridge for about 30 minutes.
  • Step 8: Preheat and Bake - Preheat oven to 425°F (220°C), brush crust and bake for 15 minutes.
  • Step 9: Reduce Temperature and Continue Baking - Lower oven to 350°F (175°C) and bake for an additional 40-45 minutes.
  • Step 10: Cool Completely - Allow the pie to cool completely before serving.

Notes

Serve warm, with vanilla ice cream or whipped cream. Leftovers can be stored at room temperature for two days, refrigerated for a week, or frozen for up to three months.
