Main Ingredients

  • 2 medium Honeycrisp apples Alternatively, use Gala, Fuji, or Granny Smith apples.
  • 1 cup feta cheese Blue cheese or goat cheese can be used as alternatives.
  • ½ cup toasted pecans
  • 5 cups mixed greens Spinach, kale, arugula, or a blend.

Vinaigrette

  • 3 tbsp olive oil
  • 1.5 tbsp apple cider vinegar
  • 1 tsp honey Use maple syrup for a vegan option.
  • to taste salt & pepper
  • ½ tsp Dijon mustard Optional for extra depth.

Instructions
 

Preparation

  • Wash and dry mixed greens thoroughly.
  • Slice, core, and dice the Honeycrisp apples into bite-sized pieces. Toss with lemon juice to prevent browning.
  • Crumble the feta cheese into small pieces.
  • Toast pecans in a dry skillet over medium heat for about 5 minutes until fragrant and golden.

Vinaigrette

  • Whisk together olive oil, apple cider vinegar, honey (or maple syrup), and salt & pepper to taste. Add Dijon mustard if using.

Assembly

  • In a large bowl, combine greens, apples, feta, and pecans.
  • Drizzle with vinaigrette and toss gently.
  • Serve immediately for the freshest texture and flavor.

Notes

Store leftovers in an airtight container for 1-2 days. Keep dressing separate until ready to serve.
