Ingredients
  

Crust

  • 1 ½ cups graham cracker crumbs Can be replaced with gluten-free cookies for a GF version.
  • 1/3 cup sugar
  • 1/2 cup butter, melted

Cheesecake Filling

  • 2 cups cream cheese, softened Consider using Neufchâtel cheese for a lighter option.
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups spiced apple filling (or fresh apples with cinnamon and sugar) Fresh apples recommended for better flavor.

Oatmeal Topping

  • 1 cup oatmeal Quick oats can be used for extra crunch.
  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 1 teaspoon cinnamon

Instructions
 

Preparation

  • Preheat your oven to 325°F (165°C).
  • In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  • In a large bowl, beat cream cheese and sugar until smooth; add eggs one at a time, then stir in vanilla.
  • Spread the apple filling over the crust, then pour the cream cheese mixture on top.
  • In another bowl, combine oatmeal, brown sugar, flour, and cinnamon; sprinkle over the cheesecake.

Baking and Cooling

  • Bake for about 60 minutes, or until the center is set.
  • Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

For serving, pair with spiced cider or vanilla latte. Refrigerate for up to 5 days, or freeze wrapped properly. Allow to thaw overnight for best results.
