Preparation

  • In a mixing bowl, combine the rolled oats, nut butter, honey (or maple syrup), and cinnamon.
  • Stir in the chopped apple and any optional ingredients like chocolate chips or ground flaxseed.
  • Continue to mix all ingredients until thoroughly integrated.
  • Roll the mixture into small balls, about 1 inch in diameter.
  • Place the rolled bites on a baking sheet and refrigerate for at least 30 minutes to firm up.
  • Store these energy bites in an airtight container in the refrigerator for up to a week.

Notes

Roll the mixture into bites while slightly wetting your hands to prevent sticking. Layer parchment paper between bites if storing in a container.
