Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts Chicken thighs can be used instead for a juicier alternative.

For the Filling

  • 1 cup brie cheese, rind removed and cut into pieces Substitute with goat cheese for a tangy twist.
  • 1 large apple, cored and diced Granny Smith or Honey Crisp work well.

For Seasoning

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For Cooking

  • 2 tablespoons olive oil For searing the chicken.
  • Fresh thyme optional for garnish

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Using a sharp knife, create a pocket in each chicken breast by cutting horizontally into the thickest part without cutting all the way through.
  • Season both the outside and the inside of the chicken pockets with garlic powder, salt, and pepper.

Stuffing and Cooking

  • Fill each pocket with pieces of brie cheese and diced apple. Secure with toothpicks if needed.
  • In a skillet, heat olive oil over medium heat. Sear each chicken breast for about 3-4 minutes on each side until golden brown.
  • Transfer the seared breasts to a baking dish and bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).

Serving

  • Let the chicken rest for 5 minutes before serving. Garnish with fresh thyme if desired.

Notes

Store leftovers in an airtight container for up to 3 days. For longer storage, freeze in a freezer-safe container for up to 2 months. Warm in the oven at 350°F (175°C) for about 15-20 minutes, or until heated through.
