Dressing Ingredients

  • 1/2 cup mayonnaise Can use vegan mayonnaise for a dairy-free option.
  • 1/4 cup Greek yogurt Can substitute with silken tofu for a vegan option.
  • 2 tablespoons honey Adjust for sweetness preference.
  • 1 tablespoon apple cider vinegar Can use plain white vinegar or lemon juice.
  • to taste Salt and pepper Season to your liking.

Preparation

  • In a large bowl, combine the chopped Honeycrisp apples and broccoli florets.
  • Toss the apples with a little lemon juice to prevent browning.

Dressing Preparation

  • In a separate bowl, whisk together the mayonnaise, Greek yogurt, honey, apple cider vinegar, salt, and pepper until smooth.
  • For a fluffier dressing, use an electric mixer or a small food processor.

Combine Salad

  • Pour the dressing over the apple and broccoli mixture and toss until well coated.

Refrigerate

  • Refrigerate for at least 30 minutes before serving to allow flavors to meld.

Serve

  • Serve chilled and enjoy, garnished with extra apple slices or sunflower seeds.
