Filling Ingredients

  • 2 cups shredded rotisserie chicken Can substitute with cooked chicken breasts or canned chicken.
  • 8 ounces cream cheese Use room temperature for easier mixing.
  • 1.5 cups sharp cheddar cheese (shredded)
  • 1 cup black beans (drained and rinsed)
  • 1 can sweet corn (drained)
  • 1 can diced tomatoes (drained)
  • 2 tablespoons taco seasoning Store-bought or homemade.
  • 1 cup fresh pico de gallo
  • 6 pieces flour tortillas (burrito size)
  • as needed cooking spray
  • as needed sour cream (for garnish)
  • as needed extra pico de gallo (for garnish)

Instructions
 

Preparation

  • Preheat your air fryer to 400°F (200°C).
  • In a mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, black beans, sweet corn, diced tomatoes, taco seasoning, and pico de gallo.
  • Scoop about 1 cup of the filling mixture into the center of each tortilla.
  • Fold the sides in and roll tightly.
  • Lightly spray the outside of each burrito with cooking spray.

Cooking

  • Place them in the preheated air fryer in a single layer.
  • Cook for 5 minutes before flipping them over, then spray the opposite side with cooking spray.
  • Cook for an additional 5 minutes until both sides are golden brown.
  • Remove from the air fryer and serve warm with sour cream and extra pico de gallo on top.

Notes

You can add crushed red pepper flakes for a spicy version or use grilled tofu for a vegan version. For a breakfast twist, include scrambled eggs.
