Ingredients
  

For the Quesadilla

  • 2 pieces 8-inch flour tortillas Substitute with whole-wheat or corn tortillas if desired.
  • 2 tablespoons salsa Adds moisture and flavor.
  • 1/4 cup mozzarella cheese Can substitute with pepper jack or cheddar.
  • 1/4 cup Mexican cheese blend Any similar cheese can be used.
  • 1/4 cup cooked chicken breast, chopped Shredded rotisserie chicken works well.
  • 1/4 small bell pepper, chopped
  • 1/8 small red onion, finely chopped
  • 1/2 tablespoon melted butter Brush over quesadilla for crispiness.

Instructions
 

Preparation

  • Preheat your air fryer to 200°C (400°F) for about 5 minutes.
  • Spread salsa evenly on one half of a tortilla.
  • Layer the cheeses, chopped chicken, bell peppers, and red onion on the other half of the tortilla.
  • Fold the tortilla in half to enclose the fillings.
  • Brush melted butter over the top of the quesadilla.
  • Place the quesadilla in the air fryer basket and cook for approximately 4-5 minutes until golden brown.
  • Remove from the air fryer, cut into quarters, and serve hot.

Notes

Don’t overstuff the quesadilla for the best results. Use quality tortillas for the best texture and flavor. Refrigerate leftovers in an airtight container for up to 3 days.
