  • 2 large boneless, skinless chicken breasts (about 1½ lbs total) Can substitute with chicken thighs.
  • 1.5 cups jarred salsa Choose mild, medium, or hot based on preference.
  • 1.5 cups shredded cheese Mexican blend, Monterey Jack, or cheddar are great options.
  • a pinch salt & black pepper To taste.
  • 0.5 tsp chili powder or smoked paprika For added spice.
  • Fresh cilantro and lime wedges For garnishing.

Preparation

  • Preheat your oven to 400°F (200°C) and prepare a baking dish by lightly oiling it.
  • Pour a few tablespoons of salsa on the bottom of the prepared dish.
  • Pat the chicken breasts dry with a paper towel. If they are thick, slice them horizontally into cutlets. Lightly season with salt and pepper.
  • Place the chicken breasts (or cutlets) in the baking dish and pour the remaining salsa over the top.

Cooking

  • Bake uncovered for 18–22 minutes for cutlets or 22–26 minutes for thicker breasts until the chicken is cooked through.
  • Sprinkle the shredded cheese evenly over the baked chicken and return to the oven for an additional 3–5 minutes, until the cheese is melted and lightly golden.

Serving

  • Let the dish rest for about 3–5 minutes before serving. Top with fresh cilantro and serve with lime wedges.

Notes

Store leftovers in an airtight container in the refrigerator for about 3-4 days. Can be frozen for longer storage.
